This week has been a doozy. Hot, humid and just 'stay in the apartment' kind of weather. I hate summer!
But, then, again, I hate winter. Just give me spring and fall and I'll be happy. I guess I just don't like extremes.
My son-in-law sent me some tomatoes and peppers from his garden the other day. How sweet was that!
Then, a few days later my housekeeper brought me eggplant, tomatoes, cukes and peppers. My cupboard runneth over!
I've never cooked eggplant before. Not even sure I like it. So, any suggestions out there?

ReplyDeleteEgg Plant known as Aubergine here in UK, cooks well with beef mince and cheese and spices, very tasty served with rice.
ReplyDeleteOh, I love eggplant so! My mother used to slice it thin, fry it a bit, then layer it in a dish with tomato sauce and spices and cheese and bake it 'til it was hot and bubbly. She never wrote a recipe down, but it was so good!
ReplyDeleteFresh veggies, what a wonderful treat. If you enjoy fried green tomatoes try preparing your eggplant in a similar way, peel it first. It isn't as tart but tasty! Fun to try something new.
ReplyDeletePeel it, slice in round disks, smear with mayo, dip in parmesan cheese and bake in400º oven for 20 minutes flipping it over after 10 min.
